I had seen this
recipe and just couldn't wait to try it!! I had some pineapple, but it was in syrup so I couldn't use those....so last night when we went out Z picked up another can of pineapple tidbits in juice so I could make the cupcakes. Here is the first batch, ready for the cake batter: (I went back and added more pineapple after I took the pic)
The second batch, ready for the oven! (I forgot to get a pic of the first batch after I added the batter...LOL)
All done!!

I was really proud of how well these turned out! Some of the topping did stay inside the pan, but it was easy to just scoop out and re-add it to the cake. And i've only had a tiny bite of one, but it tastes SOOOO good.
